Recipe : How to bake Chouquettes

Recipe Chouquettes

 

I kind of wanted to share this recipe because it’s easy enough but not a lot of people know about it outside of Europe.
Chouquettes don’t require a lot of complicated ingredients or steps, or even specific cooking equipment.

Ingredients :

  • Water : 1 cup / 250 mL
  • Butter : 5.5 tbs / 80g
  • Eggs : 4
  • Flour : 1 cup / 125g
  • A dash of salt
  • A bag of pearl sugar

Also you’ll need :

  • An oven
  • A pan
  • Parchment paper
  • A spatula
  • A poche, or a ziploc bag

Steps :

  1. First, pre-heat your oven at 350 degrees.
  2. Get the cup of water, the butter (cut to melt it faster) and the dash of salt in the pan, and heat it over medium heat until it’s boiling. Once it’s completly mixed, take off the fire.
  3. Pour the cup of flour all at once in your pan and start mixing. It should easily turn into a smooth ball of dough. Let it chill for a bit (too hot, and you might cook the eggs we’re adding later)
  4. Add each egg one at a time. Mix the egg with the dough until it becomes a smooth ball again and there’s no egg left in the pan.
  5. Crack the 4th and last egg into a bowl and whisk it. Add half of that to your dough like step 4 and mix it. Keep the other half for later.
  6. Once all of your eggs are mixed into your dough, put it into a poche or simply a ziploc bag. Cut the end of the bag to create an opening.
  7. Lay the parchment paper on a tray and start laying mounds of the dough, evenly spaced. They should be the size of a walnut.
    Try to make the size consistent to cook them all evenly. Don’t worry if they’re not perfectly round as they’ll form a ball while they’re cooking.
  8. Now, coat all of your little balls of dough with the left-over egg, using a brush or the back of a spoon.
  9. Finally, just add a few pearls of sugar on each ball (about 4/5).
  10. Bake at 355 degrees for around 20 to 30 minutes, depending on your oven. Once it’s a nice golden brown, you can take them out and let them cool down.

So that’s the basic step on how to make chouquettes, but if you take out the pearl sugar, you can also make a lot of other recipes like Profiteroles or Choux à la crème !
